My camera is M.I.A. but check out these Snickerdoodle Scones. This recipe makes 8 scones. It’s quick to make, very simple, and very delicious. For a vegan recipe, sub out the egg for an egg substitute or cornstarch, ditch the sour cream for a soy cream, and there actually is soy butter or you can use apple sauce.

Ingredients
1/2 cup   sour cream   1/2 teaspoon   baking soda   2  cups  flour   1/2 cup  sugar   1  teaspoon  baking powder   1/8 teaspoon   cream of tartar   1/2 teaspoon  salt   1/2 cup  butter   1     egg   2  teaspoons   cinnamon    additional  			cinnamon sugar
Directions: 

Prep Time:  15 mins
Total Time: 30 mins
 Preheat oven to 350º.
Spray baking sheet with cooking spray.
Combine sour cream and baking soda in a small bowl. Set aside.
Combine flour, sugar, baking powder, cream of tartar and salt in another bowl.
Cut in butter until mixture resembles fine breadcrumbs.
Combine egg with sour cream mixture. Add cinnamon.
Gently stir into flour mixture until moisted.
Place on baking sheet and pat into a 3/4 inch thick circle.
Cut into 8 wedge shaped pieces. Move slightly so they are not touching.
Dust with cinnamon-sugar.
Bake 15 to 20 minutes or until golden brown.

I read what a few people suggested and decided to tackle LEMONS! So I went out a bought about 10 lemons and made a fat batch of Basil Lemonade. Don’t be weirded out, its good. This awesome drink was paired with a baked crab macaroni and cheese.

Pasta Salad

I found these photos from my friend Brittany’s photo album. It was literally the first thing I made when I got to NYC for school last year. Pasta salad is simple, and when you boil a whole box of pasta it tends to last awhile. Basically, boil the pasta, rinse in cold water, and toss in your favorite veggies, and cubes of cheese. I tossed my salad in a Tuscan Balsamic Vinaigrette I bought from Trader Joes. This salad will keep well, and is perfect for someone who wants food now and doesn’t feel like cooking. Just serve and go; yeah college.

English Muffin Pizzas
I think the name speaks for itself. I’m not going to put a price on this because it’s so damn cheap. You can even use toast; I call it a poor mans pizza. You just need your bread of choice, sauce and cheese. Have fun with it. Just pop them in the oven or toaster or microwave and BAM, its the cheapest pizza you could ever have on a budget. Really.
